The staff is still talking about the surprise visit of Prince William -- he may be heir to one of the world's most fabled fortunes, but at the end of the evening here he split the bill among his friends, paying only his fair share at this, one of the best gastro-pubs in Chelsea. It might be called the Pig's Ear, but it's really the silk purse when it comes to food. Start with such dishes as Jerusalem artichoke soup with truffle oil or chicken livers flavored with sherry vinegar. Other dishes include seared tuna with black olives and chicory or else foie gras ballantine with an onion marmalade. In honor of its namesake, the chefs deep fry pig's ears. Filet of sea bass appears with beet root and baby leeks, and a roast wood pigeon is stuffed with garlic-laced portobello mushrooms. The atmosphere is friendly and unpretentious in either the ground floor pub area or in the wood-paneled restaurant upstairs.
