  • For a pan of saffron-scented and seafood-studded paella, a hearty bowl of stewed lentils, a plate of garlic sautéed mushrooms over toast, a slice of acorn fed Spanish ham, a plate of sliced white Manchego cheese triangles, an earthenware dish of Madrid style tripe, a fried calamari sandwich with a cold mug of beer, and a plate of fried churro pastries dipped in a cup of thick hot chocolate, you've come to the right place. In the Spanish capital there are myriad restaurants where you can savor Madrid's own specialties, or else take a tour of Spain's celebrated regional cooking. Most people come to our top local traditional restaurant pick, Casa Patas, for the excellent live flamenco shows, but the restaurant serves up traditional Spanish cooking at its best with dishes drawn from all over Spain. Known as the world's oldest restaurant, our second pick Botín is quite expensive but an experience to remember with traditional Spanish fare like suckling pig, braised pheasant, and black pudding in four distinct but traditionally Spanish decorated dining rooms. Our third pick, Champanería Gala, is a fun and festive place to take a group for large pans of Spanish paella in an indoor garden-like setting. Our fourth pick, Museo del Jamón, translates to 'Museum of Ham' and has slabs of hams lining the walls and hanging from the ceilings. Naturally, it's a good place to stop off for a ham sandwich.
