Only a handful of other restaurants in Madrid focus as aggressively as this one on the national dish of Spain, paella, which here comes in 14 different versions with permutations that might surprise even the most jaded aficionado. Once seated in the yellow-and-white dining room loaded with potted plants, you can order any of several paellas, including versions with shellfish, with chicken and shellfish, with pork, with crabs, with lobster, and an all-black version that's tinted with squid ink for extra flavor. There's even a vegetarian version if you absolutely, positively hate fish. Lots of journalists, writers, poets, and artists seem to have adopted this place.
