I strongly recommend Casa Mira in Plaza Félix Saenz, they cook delicious churros and is very cheap.

You can also try Casa Aranda in the city center...depends on what you consider "late night," but lots of Spaniards stay out until the sun rises. Opens around 7-8am. http://www.nileguide.com/destination/malaga-spain/restaurants/casa-aranda/817369
