This "glass box" attached to the El Baluard modern art museum is the best place in town to sample new Majorcan cookery. The talented chef, Joan Torrens, takes traditional recipes of the island and modernizes them based on seasonal produce. Dishes are delicately crafted and harmonious in flavor and are backed up with an impressive wine list. For starters, try an innovative dish, sticky rice with rabbit, mushrooms, and snails, or else cream of artichokes with Iberian ham. Fish is a specialty, including a ragout of prawns and scallops with a citrus vinaigrette, or else you can try such meat dishes as a crystallized suckling pig or a loin of lamb stuffed with eggplant.
