  • For some of the best-tasting regional cuisine, and to escape the heat of Palma, we like to head directly west of the city to the satellite village of Gènova. Here, in the attractive dining rooms of a hacienda, you can enjoy typical local cuisine served by a helpful staff. Sopas mallorquinas (the island's famed vegetable soup) begins many a meal here. The chef obviously loves cod, and he cooks it superbly in at least 10 different preparations. You might want to order some of the best suckling pig or roast baby lamb in Majorca. Paella is served with dried salt cod and vegetables, an unusual variation on this classic dish.
