Feel free to walk around the open kitchen
It's not often that a hotel restaurant can totally separate itself from its lodging and stand on its own two feet, but Collins Kitchen has become one of the city's best restaurants. One of the most interesting aspects of it is that it features a huge open kitchen, where diners are allowed to walk through and interact with the chefs at work. There are five different dining concept stations including Grill, Wok, Sushi, Deli and Patisserie, all with experts preparing meals. The openness of the kitchen spreads into the main dining room, and despite the prestige of the Hyatt name, the room feels casual and comfortable. It's premium wine room has over 2700 varieties, and there is a private dining room for groups of 10 to 14. The express three-course lunch is especially good value, and the blue swimmer crab linguine a real highlight.
