Despite its Japanese-sounding name, this Miami staple is not at all Asian-inspired, as it's "Soy" name may indicate. Rather, Soyka is the brainchild of Mark Soyka, owner of News Cafe and other notable Miami hot spots. In many interviews, Soyka has mentioned that what makes his brand so strong is the brand's format to never say no; i.e. substitutions, small credit card charges, anything goes.
