Some adult-fun, kid free ideas: Monterey Bay Sailing tours. Great way to see the other side of Monterey in a safe yet exhilarating way. Tons of tour options too. Also good are the Monterey Bay Whale Watching Cruises. Both leave out of Fisherman's Wharf. Exploring/taking a tour of the Tor House in Carmel (and the adjacent Hawk Tower) is a great half-day activity. John Steinbeck Museum in Salinas is always a hit, and checking out old-town Salinas is like being in a Western.
Taking a wine tour is a nice adult activity. The Bernardus Winery is a good choice, but also consider the just-opened Caraccioli Cellars in Carmel for a fun, funky wine and food atmosphere.
Picnic at Lovers Point in Seaside, hike in one of Big Sur's parks (Julia Pfieffer Burns State Park is a very popular one). The Hawthorne Gallery off the 1 in Big Sur is neat.
Check out the local paper's (montereycountyweekly.com) event calendar for shows (plays, music), art exhibits, and events in general that might be going on during the time of your visit. I hope this all helps :) have a great trip.
