Green Gables Inn in Pacific Grove is quite unique. Has an old world Victorian feel but sits right on the waters edge too--kind of a comfort meets cool thing. The Hotel Abrego is a really nice hotel too--excellent central location, good service, def "hip."
if you really want unusual, check out the Jabberwock Inn, a quirky B&B. here's their site: http://www.jabberwockinn.com/
if it's in your budget, the Post Ranch Inn in Big Sur is one of the country's best hotels. Though its very luxurious, it goes for an "organic" atmosphere, making it more than a cookie-cutter Hilton or Hyatt. This place is really one of a kind. Try the Spindrift Inn on Cannery Row. It is next to the Aquarium, so you will be in the center of the tourist trap. If you want to go on the cheap, do the Motel 6 on Fremont St.! For the ultimate in frugality, look in the dumpsters for some cardboard and set up a squat under an overpass.
