The cuisine is genuinely excellent, even experimental dishes that genuinely challenge your culinary radar. Stellar examples include seaweed-pineapple tuna; sesame seared scallops; Kobe filet mignon; well-choreographed versions of sashimi and sushi, and Alaskan halibut in a wasabi sauce.
