- Palmaz Vineyards is the re-built Cedar Knoll Winery, which enjoyed much critical acclaim in the early 20th century but fell to ruin during Prohibition. Palmaz produces mostly Cabernet Sauvignon, with Bourdeaux varietals for blending and small plantings of other grapes for limited-production releases. Their winemaking happens in their maze of expertly constructed caves under Mount George. By appointment only, visitors can enjoy a private tour and tasting that includes a tour of the cave, a tasting of winery-only wines, and hors d'oeuvres. You should allow at least two hours for the visit, which is $60 per person (charge applicable toward the purchase of wine).
