Be it the fiery Vindaloo from Goa, Shrimp Masala from Cochin, Chennai's favorite Chettinad sauce (Madras Chicken Chettinad), the eggplant (Bagharey Baingaan) from Deccan, the mustard & poppy laced Okra from Bengal (Bhindi Sarso Posto), the aromatic apricot stuffed Pasanda, Roganjosh from the fabled valleys' of Kashmir to the omnipresent Chicken Tikka Masala, coupled with vegetables & meat grilled to perfection in the clay ovens from the north-west frontier.
