Description:
Don't go to Pala expecting your typical New York City pizza. The owners studied how pizza was made in Italy and have done their best to try to replicate it. Pala has concocted a special pizza-making process, including a slow-rising dough that they claim makes their pies easier on the belly. I can attest that consuming practically a whole zucca pie (oblong-shaped and topped with sautéed pumpkin, pancetta, and smoked scamorza cheese) along with a few slices of a bufala cruda (buffalo mozzarella, cherry-tomato sauce, and fresh basil) did no damage to my stomach except for possibly expanding it. There's nothing scientific about the non-pizza items such as the fiori di zucca (fried zucchini blossoms stuffed with buffalo mozzarella and anchovies) or the marinated fresh artichokes with lemon, oil, and Parmesan cheese shavings. Pala is loud and lively, with long, wooden tables.
