I will be visiting with my husband and 2 kids summer 2011, overwhelmed with all the possible things to do, which side to see the falls from,
where to stay, etc. Can someone provide guidance re must-sees/dos?THANK YOU!

Niagara Falls is such a stunning not-to-miss feature frankly it doesn't matter to me whether you are on the Canadian or American side; both are breathtaking. For where to stay, I would recommend the charming town of Niagara on the Lake which hosts a summer Shakespeare Festival.

See Niagara Falls from both sides of the river. Be sure to visit the oldest state park in the United States on the American side which allows you to walk right up to the Rapids in the Niagara River at Three Sisters Island. There is an excellent tram tour through the park. The American Falls is most visible from the Canadian side.
Any motel will really do unless you want deluxe accommodations. A day trip to Niagara-on-the Lake is wonderful, but customs are VERY slow, so do it when you are already in Canada.
Niagara Falls, NY has a "Little Italy" with wonderful food at many restaurants.
