Description:
It was daring to open a restaurant in the same small town as the multistarred inns described above, but chef-owner Dominic Tremblay has pulled it off. Contained in a small roadside house with a plain, unassuming interior, the true art appears on the plate. Think seared scallops with blackened watermelon, cilantro pesto, and cantaloupe froth, or veal sweetbread with roasted peaches and orange-cardamom tapioca. All evening meals are served as one of three table d'hôtes, and served leisurely (plan 2 1/2 hr.).
