If you treasure discovering those little-known and unpretentious local eateries with tasty, home-cooked food, then head over to Chimborazo. This Peruvian family establishment offers a lengthy menu of traditional Peruvian and Panamanian cuisine, and is most famous for its hearty stews such as sopa parihuela, a spicy seafood and tuber soup usually eaten to recover from excessive drinking the night before; and sopa de levantamuertos, a cilantro-infused seafood stew that translates as "soup to wake the dead." There are also fresh fish dishes with garlicky and spicy sauces, and meat dishes. Chimborazo has a lively "locals" atmosphere with tables that have their own thatched roofs. There are two locations: the Vía Porras one, closest to downtown; and near the Hipódromo, on the way out to the Tocumen airport.
