Sensing - Paris

  • Description:

    • This eatery is devoted to the five senses. One of the most famous chefs in Paris, Guy Martin, who continues to enjoy his three stars granted by Michelin at Grand Véfour, is also the inspiration for this chicly modern Left Bank restaurant. Wisely, he's hired a talented on-site chef, Rémy Van Péthegem, to rattle those pots and pans, and he's full of innovative surprises.

The decor relies on video projections on the walls and blond sycamore tables. Videos celebrate women's beauty, showing lips, curvature of the shoulder, hairdos, and eyes, as well as fields of blooming flowers. When plates are served, they are like statements from a museum of modern art -- geometric arrangements of rectangles and cylinders along with Miró-like squiggles of sauce. Dishes are sublime, ranging from herb-crusted veal with tubes of macaroni stuffed with fresh mushrooms to fresh squab coated with a muscovado sugar caramel crust.
