    • Most people equate southwestern or Mexican food with "fast food" -but Chimayo kindly likes to differ. Southwestern cuisine at this particular restaurant has been touch with the grace of a gourmet hand. The familiar combination of spices here combine together with atypical delicacy. Creative combinations are thrown in the mix as well. Imagine a contemporary American menu, transpose onto a southwestern flavor palette, and you've got Chimayo. Examples from the menu include smoked chili steamed muscles, kobe beef with papas fritas, and duck sangre de christo. This kitchen takes some of the finest foods and infuses them with creative southwestern glazes, reductions, and flavors.
