Interesting question and one that I'm quite sure has been asked by a majority of vistors to Prague. Of course, as we all know only too well, you can please all of the people some of the time and some of the people all of the time... but.... you know the end bit.
I don't want to start here writing a list and I certainly don't want to confuse or over load with too much information. Plus pleasing all, all of is the impossible.

Hello Mark, if you mean traditional food, there are several nice and cheap restaurants in the city centre: www.uspirku.cz, www.uprovaznice.cz
otherwise to experience real Prague you should take the underground or tram to ZIZKOV or KARLIN or HOLESOVICE. Is this your first visit?

The typical working class food is dumplings, pork and cabbage (not very healthy one and not very good to those temperatures ;o)). And you can get this at almost every restaurant you can imagine (except of McD, Pizzerias and Cafés). Quality and price varies. Even in touristic pubs around city centre you can get this. If you want to connect the food with the atmosphere, I think that this suggested Zizkov (tram No 26 from Hlavni nadrazi dirrection Zahrani Mesto, the first or the second tram-stop would fit well enough) or Vinohrady (Metro - Line A, Stop Flora or Jiriho z Podebrad) - on the Vinohradska street there is plenty of them and you just have to choose.
