The area around the Vatican is not the place to go for great restaurants, but Cesare is a fine old-world spot known for its deft handling of fresh ingredients. We come here for the fresh and tender seafood salad, brimming with cuttlefish, shrimp, squid, mussels, and octopus, and dressed with olive oil, fresh parsley, and lemon. Our table was blessed with an order of spaghetti all'amatriciana in a spicy tomato sauce flavored with hot peppers and tiny bits of salt pork. The saltimbocca alla romana, that classic Roman dish, is masterful here. Try the fresh sardines and anchovies if you want to go truly Roman.
