- The group that hosts this festival is dedicated to Cajun music and family dancing. There are usually dance instructors with two live band dancefloors, one for beginners and one for accomplished dancers. If you don't want to dance you can listen to some of the top Cajun bands in the country. Some are local and they do invite nationally known talent as well. When you tire of dancing you can find nearly every food specialty you would expect to find in New Orleans. The vendors are varied but most stay with the Gator by the Bay theme. There are several places where the kids can participate and there is always a make and take, e.g. paper bag hats, mardi gra masks, Parking can be a little sticky but it usually works out. This is located just behind the Sheraton Hilton and the park is breathtaking with many outdoor art sculptures.
