Depending on when you go, the beaches are lovely. There is also a very cute zoo. It's pretty small, so you won't get too worn out spending a day there. There is some good seasonal whale watching as well (although dolphins can be spotted pretty regularly from the beach, if you don't want to go out on a boat). See if there is something good playing at the Arlington Theater. It's a very old movie theater that is dressed up to look like you're outdoors. Pretty cool if you're a kid! You can also rent pedal cars down on State Street.
Lastly, about a half hour north east of Santa Barbara is a Danish town called Solvang. It has lots of windmills and fairy tale-themed restaurants and shops. If you go there, don't skip the aebelskivers (a Danish pastry similar to a pancake topped with jam). Yum!
