  • Peru is widely regarded as home to the best cuisine in Latin America after Mexico, and far and away the best place in Santiago to sample the country's spicy, delicious concoctions is Barandiaran. The eponymous Chef Marco Barandiaran launched his career as the chef in residence at the Peruvian embassy before graduating to become a charismatic TV personality in addition to an acclaimed gastro entrepreneur. This is the third and the newest Barandiaran restaurant, and the best in terms of service, its attractive yet casual ambience, and location. Because it is tucked away in the Patio Bellavista arts-and-crafts market, you can shop till you drop and then refuel on superbly prepared ceviche, fried calamari, parihuela (sea bass stew), or tender lamb in a cilantro puree. There's also lots of patio seating. Contrary to popular belief here in Chile the pisco sour originated in Peru, and the potent exemplars served here -- blended with an egg white -- will knock your socks off.
