    • Chile is not Argentina, with its all-you-can-eat beef buffets. But in exchange, it has a handful of well-known and well-loved mostly meat restaurants, of which Vacas Gordas is a proud and well-deserved member. The ambience is formal, but not stuffy, and the appetizers are tasty and abundant, but the real star of the show is the beef, in its various incarnations. Wagyu is popular, but the Chilean favorite lomo vetado is another favorite, and rightfully so.

      Meat is cooked to the precise temperature or doneness you request, and the waiters are patient, regardless of the crowds of people. Speaking of crowds, upstairs tends to be less busy than downstairs, so that's a good option if you're trying to get away from large groups. Consider making a reservation for Thursdays, weekends and any day of the week towards the end of the month.
