• As the name suggests, oysters are the focus of this downtown restaurant called Shuckers, located in the Fairmont Olympic Hotel. Twelve local varieties of oysters are available in single servings, by the half dozen and by the dozen. The restaurant has dark wood and a high ceiling, similar to a traditional pub, and dress is fairly casual. Highlights of the menu include oyster delicacies and Garlic and Rosemary Roasted Dungeness Crab with Baby Yellow Fin Potatoes. Many other non-seafood favorites are offered as well.
