The Georgian is as grand as they come, and if you're looking for haute cuisine, palatial surroundings, and superb service, no other restaurant in Seattle comes close. This is by far the most traditional and formal restaurant in the city, and dinner here is always an event to be savored. Meals are assembled from the finest ingredients available, with foie gras, crab bisque, and Maine lobster making frequent appearances on the seasonal menu. If you're here in early summer, keep an eye out for dishes with morels and truffles; at any time of year, be sure to order soufflé for dessert. For the full Georgian experience, I recommend opting for the three-course or seven-course dinner. The seven-course dinner might include seared foie gras with a vanilla-bean sauce, oysters with a caviar mignonette, seared scallops with a hint of truffles, rack of lamb with mint peas and fava beans, sottocenere cheese with blue cheese-stuffed cherries, caramel-sautéed apples, and, of course, chocolate cake. All in all, a divine assemblage of flavors and textures. The wine list is superb, and service is so attentive that you will likely feel as though yours is the only table in the restaurant.
