- This intimate 40-seat restaurant on the 70th floor of the Swissotel the Stamford is often listed amongst Asia's top restaurants. Guests dine below a stunning Murano crystal and silver free-flow chandelier that spans the entire length of the restaurant, while through the windows the dynamic Singapore skyline is laid out below. With such a dramatic setting, the food needs to work hard to compete, and since October 2011 that challenge has fallen to chef de cuisine Julien Royer – a 29 year-old who trained under three-Michelin star chef Michel Bras. Royer describes his menu as 'artisanal cuisine', with seasonal produce being sourced from around the world, with a focus on organic farms. Expect Norwiegan scallops, New Zealand lobster, Welsh lamb – and of course, French cheeses. A wine list of nearly 500 bottles is available for matching.
