Some of the best fusion restaurants in the Caribbean are to be found on St. Thomas, which boasts a roster of impressive and unique establishments and world-class chefs. Some offer highbrow fusion which innovatively merges different culinary traditions, while others offer a blend of American and European classics with a homespun Caribbean twist, in a nod to island heritage.
Havana Blue, at the Marriott Frenchman's Reef, fits in the first category. The chef offers up imaginative Latin-fusion dishes with Asian influences, such as black-bean hummus, tuna tartare with soy-lime vinaigrette, star anise duck confit, and miso-crusted sea bass in a chic setting.
Along the same lines is Theo's restaurant, on Back Street, which merges Thai and West Indian flavors in creative ways in an elegant setting. Theo's unique and tasty creations include mango barbecue wings, red thai coconut curry tofu, pepper-crusted New York strip steak, coconut ital stew, and pigeon peas rice pilaf.
Craig and Sally's, one of Frenchtown's best restaurants, has views of the sky and sea which are complemented by a cuisine that ranges from pasta to seafood, with influences from Europe and Asia. Its eclectic cuisine is, according to the owner, "not for the faint of heart, but for the adventurous soul.
Over at Secret Harbor resort the Blue Moon Cafe melds American, European and West Indian food in zestful combinations, such as mahimahi with pecans, bananas, and a coconut-rum sauce, and grilled scallops with a tomato-basil risotto with fresh asparagus.
In downtown Charlotte Amalie the Amalia Cafe is famous for its Spanish-American-West Indian menu, which includes an array of tapas, paellas, fish and shrimp dishes, soups, salads, and steaks. And Gladys', also downtown, melds American food with Caribbean flavors and spices. Dishes include local lobster, shrimp, fish, and a house specialty hot chicken salad, made with pieces of sautéed breast with red-wine vinegar, pine nuts, and dill, all nestled on a bed of lettuce.
