Vincent Klink, one of the most celebrated chefs in Germany, runs the greenest restaurant in Stuttgart. He focuses on food raised without pesticides or chemical additives. Every month, he changes the menu, posting the new carte like a work of art. Klink is an inventive chef, and he has an almost sensual approach to food, giving his cuisine a seductive charm that can wake up a terminally jaded palate. You're likely to be captivated by such dishes as braised rye bread with fresh oysters or baked venison with herbs, and especially the rack of veal with sweetbreads and fresh morels. The thornback ray filet with capers and Amalfi lemons might well be the best version of this dish you ever order. If featured, start with his minestrone with olives and basil; it should win an award.
