The menu, geared for the high-altitude, hearty climate outside, features generous portions of regional recipes that reflect the local traditions of both Switzerland and nearby Austria and Italy. Examples include pork filets with lemon sauce; lamb cutlets with balsamic vinegar sauce; carpaccio of veal or beef; air-dried bundnerfleisch (a type of beef); different preparations of salmon and trout; and the classic dish of Vienna, Tafelspitz, the boiled beef with horseradish sauce. Dessert may include rich chocolate cake or flambĂ©ed raspberries with cream.
