In a city spoiled for 5-star choice, it takes a boutique newcomer to define that something different, to distinguish it above, or separate to, the rest in its premium price range.
The ubiquitous Merivale Group has a host of fine bars, pubs and restaurants across the city. And this is the boutique hotel that sits above the bar of the same name, right in the heart of Sydney's business district. The 31 elegantly appointed rooms (including two penthouse suites) are open plan, larger than you'd expect, full of designer touches, and are so hip (yet somehow intimate) they almost hurt. Even the bathrooms are bigger than the average hotel suite. An equally sleek and sharp private gym is also available.
When you can tear yourself away from the accommodation, downstairs is the Establishment bar, a haven for big city types and pretty young things. In this same building is the highly esteemed sushi e restaurant, which is tucked behind the chic cocktail lounge Hemmesphere on Establishment's fourth floor. For fine dining, there is est. (yes, the period is part of the brand, not the completion of a sentence), the only restaurant in town to have maintained three hats in the SMH Good Food Guide Awards every year since opening. You could spend a long weekend (or longer) here and never have cause to leave the building.
But if you felt obliged to, many of the city's prime CBD attractions are all just a short walk away; north to The Rocks, Circular Quay and Opera House; west to King St Wharf and Darling Harbor; east to the Botanical Gardens and Domain; south to all the designer shopping a credit card could handle.
No wonder the Establishment is a Condé Nast Traveler winner several times over. Quite simply, it's up there with the best of the best of Sydney hotels.
