- Bistrode is often busy, so book ahead. The food is an unfussy French/Mod-Australian: a characteristically Sydney combination of pared back classics with the freshest of local ingredients. Some sample dishes: corned wagyu beef with white sauce and baby carrots; sirloin with shiraz sauce; brawn terrine with capers, parsley and mustard cress. Our recommendation: take your time over dinner, browse the wine list and chat until 10, before taking a turn up Bourke Street down to Taylor Square, the heart of gay Sydney, where – if it is late enough – you will see the reeling party-goers heading into the clubs. Another characteristic experience that will give you a little more taste of this vibrant Southern city.
