- Chef Dinesh Singh Butola shows Amaya's patrons there's more to Indian restaurant cooking than samosas and curries. Harra Kebab Fritters are a delicious mixture of spinach, potato and spices stuffed with a creamy cheese filling served crispy along side sweet tamarind chutney. Savory Chaat, a common street food in India, combines wheat crisps, sprouted beans, potato and puffed rice with fresh mint, coriander and yogourt. Patrani Machchi, banana leaf wrapped halibut is served in a rich sauce that incorporates a blend of 21 spices. Murgh Satrangi combines organic chicken, diced vegetables and tomato in a lemon enhanced curry; a tasty alternative to Butter Chicken without the butter and cream! Just as the food avoids clichés, so does the setting. The 40-seat dining room is accented with subtle hints of India by means of stunning photography creating an inviting atmosphere that is casual and friendly yet elegant and sophisticated.
