This is one of Toronto's most exceptional dining experiences. Tucked away on a quiet street, Amuse-Bouche is a cozy spot in winter (when you dine inside the red-walled main room), and an airy one in summer (when you can take a seat on the patio out front). Technically speaking, an amuse bouche is a little dish served at the beginning of a meal, something small yet interesting enough to tantalize your mouth and make you curious about what will follow. Amuse-Bouche achieves this feat with each plate, making the complex and the complicated seem natural. Somehow black cod ceviche with pink grapefruit is enhanced by the pineapple caipirinha sorbet on the same plate, just as the salmon and grilled shrimp are set off perfectly by fennel salad and miso-mustard jus. It's interesting to have so many strong flavors on a plate at once, but to have them come together in such harmony is a great achievement.
