Description:
Under another name, this has been a local favorite since shortly after World War II. In the commercial heart of Tours, it has two dining rooms and an outdoor terrace for warm-weather dining. The ever-changing menu may include homemade foie gras and whitefish caught in the Loire and served with beurre blanc. Regional ingredients mix well with the local wines, as exemplified by pikeperch with sabayon; a beuchelle Tourangelle, a ragout composed of local red wine from the Loire Valley mixed with veal sweetbreads and kidneys; and magret de canard (duckling) served with a "jam" of red Chinon wine. In summer, strawberry parfait with raspberry coulis is a perfect finish.
