Tucson has more than 500 miles of metro bikeways and was recently named the third-best cycling city in the country by Bicycling Magazine. There is also mountain bicycling here in Tucson, and you will need a permit for that. You can read more about hiking, rock climbing and also about biking day trips at http://visittucson.org
As far as skiing in the Tucson area, it is available on Mt Lemmon at the Mt. Lemmon Ski Valley but it is if and when it snows. Mt Lemmon which is less than an hour drive from Tucson in the Santa Catalina Mountains has more than 1,200 climbing routes.
