- Mediterranean food is the name of the game in Tunis, and that involves open air, olives and couscous. Inspired by their European neighbors up north, they've taken a lot of influence of Tunisian historical dishes that are famous throughout the African and Mediterranean world and added a lot of French to their dishes after Tunisia's bout with Colonialism. Fish are of course a big part of the equation with their seaside location, and because the local economy of Tunis still powers many of its businesses and restaurants rather than chains and corporations, getting a fish caught in the afternoon to your plate for dinner is a very likely proposition.
