- We combine the flavors of Spanish, Native American and traditional Mexican dishes to create our authentic Colorado cuisine. All of the menu items are carefully prepared from scratch to ensure only the freshest possible ingredients go into our chef's selection. Executive Chef Mercer Mohr infuses west coast flair with our distinctive Colorado cuisine. Recent Chef of the Year, San Francisco, Chef Mohr also was invited to the James Beard house to prepare a special dinner for the membership. Ocotillo is one of the fewest restaurants in the valley to offer premium quality USDA Prime Beef. We use a special house-made chile rub on our steaks and chops prior to grilling. The authentic chiles and spices we use in our preparations are mild in flavor and compliment the natural flavors in our dishes. For any of our offerings, the chiles and spices can be omitted at your request.
