The oceanographique will be a good place for just one day,.

You can make an excursion half day by bike with a local guide speaking english & spanish or maybe go to see the albufera (laguna) where grow the rice for making the Paella. This excursion including: short boat tryp, visit of barraca (tipical house) and luch based in Paella.
