Fusion food can often bring out some of the best flavors in different cuisines and marry them together to create a mind blowing flavor burst in your mouth. Vancouver has plenty of restaurants that successfully execute fusion cuisine.
Miku Restaurant has some of the best sushi in Vancouver. The fish is melt in your mouth fresh and complimented by not so typical flavors. When you're there, if there's one thing you order, you must order the Aburi Salmon Oshi Sushi. It's a delectable bite of local salmon pressed and complimented with their Chef's own soy and Miku sauce and then topped with a thin slice jalapeño. Amazing!
Go Fish! isn't your typical fish and chips joint and they have re-invented the idea of what you would expect when you go for fish and chips. They offer everything from fish tacos, battered and fried fish, rare grilled tuna sandwiches and a daily soup, to name a few items. The classic fish and chips are always a solid choice, but the fish tacos and tuna sandwich are worthwhile. Make sure you don't go there starving on a summer day because there can often be a wait and the long line is the proof that's in the pudding that it's some serious good eating at Go Fish!
Izakayas are popping up all over Vancouver and they fun places to go and order a few different dishes to share with your friends. If you've been to an izakaya in Japan, don't expect the same in Vancouver because the cuisine is more fusion in these places and very delicious. The miso sablefish at Hapa Izakaya is buttery, flaky and delicious. Kingyo Izakaya is a top choice amongst its competitors, but they are all easy on the palate and feasts for your eyes.
Japadog started as a quirky hot dog stand on Burrard Street and has become so successful that they have multiple carts around the city and a store on Robson Street. They take a conventional hot dog and add a twist with items like Japanese may, nori and bonito flakes. Try one and you will likely join the cult following.
