Buenos Aires, the capital of Argentina, is a large (pop of 15 million), sophisticated city with an enormous influence of the European culture, mainly Italian, Spanish, French and English. The restaurants of this city are a perfect marriage of these circumstances, serving a diversified fare representing these European origins (but the grill is the centerpiece). They serve the highest quality beef and lamb in a very eclectic atmosphere. The meat is placed atop wood fired grills to sear, and then it is finished over charcoal to ensure that all the flavors and natural juices are retained, enhancing the tenderness of the meat in the process.
