- Executive Chef Marc-André Choquette is leading the team at the Loden hotel's Tableau Bar Bistro and is serving up traditional French bistro cuisine with an updated twist. The atmosphere is sophisticated, yet laid back and the perfect spot for a business meeting, date with a special someone or a Sunday brunch. Expect to see things on the menu like French onion soup, rabbit terrine, tuna Niçoise, a variety of flatbreads, fresh oysters and braised veal shank. The menu is diverse, which bodes well to pleasing different palates and if you're looking for sharing, there are plenty of small plates on the menu. The cocktail list offers a number of tasty elixirs and The Fiscal Agent is beautifully delicious. It's mixed with rye, giffard abricot du roussillon, grapefruit juice, peach bitters and shaken to perfection. Like any good French bistro, they know their wine and the concise list of vintages will pair well with your meal. Located in Vancouver's financial district, it's an easy walk or cab ride from most places in the city.
