Excepting maybe the Cipriani, newcomer La Cusina is the only hotel restaurant in Venice that deserves singling out on its own. The service is stellar, and the seating is in that most sought-after of spots: a terrace right on the Grand Canal overlooking floodlit Santa Maria della Salute across the water. They reserve a page in the menu for dishes made fresh from what the chef found that morning at the market. You may find ravioli stuffed with sea bass in a light cream sauce with wild fennel; maltalgiati noodles in a duck and truffle ragù; or rabbit saddle with sun-dried tomatoes and grilled leeks.
