In summer, in the event of very low tides, Venice canals don't smell like flowers, that's true. If it's enough to prevent you to visit such a beautiful city, just avoid July and August.
Another idea could be to swap your boyfriend for one more sensitive to art, history and culture, than to some unpleasant hodour :)
By the way, drinking water in Venice is of top quality, with lots of free fountains in the "calli" (streets), so don't be impressed by the many Americans marching around with jerrycans strapped to their backpacks...or spending 3 euros on a bottle of the same water that they could easily draw for free!
Have a nice holiday in Venice!

If he is thinking about jumping in the canals for a dip, well of course the water stinks, Venice is built on a lagoon it is not a swimming pool. But it does not stink like he says anyway. The tide comes 4 times a day and the water nowadays is very clean, unless stupid tourists throw rubbish in it!
But Venice is not about its smell, it's about beauty, art, art, history, mistery: if all your boyfriend can think about is the smell, then come over to Venice with someone else!
