Examples are foie gras with vegetable-flavored vinaigrette, pot-au-feu of vegetables with foie gras, cream of lentil soup with scallops, roasted duck with navarin of vegetables, and roasted codfish with roasted peppers in the style of Provence. Looking for something unusual and earthier? Try fondant of pork jowls with fresh vegetables.
