Here is a good source of information. I looked up 'Beiseln Wien' in iGoogle.at and up popped this treasure-trove of recommendations, per Bezirk ( or Borough ) in Vienna: http://www.wien-konkret.at/lokale/. Since the places that you want to go to are off -limits to me ( ie I must watch my cholesterol intake & this kind of authentic cooking uses plenty of speck or butter-schmalz which is totally FAT or full of the stuff that likes to clog arteries.)...but, if you want to get reliable info on 'authentic' bars or Lokals in Vienna, I don't think you'll go wrong with the link I provided.
