- A small taco stand standing on the side of the road in hot, dry Waimea, Island Taco resembles a true Mexican taco stand, except the food is fresh, safe, and always really good. The walk in and order taco stand provides outdoor seating where you will watch lifted trucks drive by, but the food is generally served to-go style. You pay as you order, and hang out and wait for the food.
A blackboard on the wall lists the huge array of meals, almost all able to be made vegetarian with tofu, or simply no meat. The orders are generally big and two tacos will most likely leave you with about half of one to eat later.
Local fish, seasoned tofu, pork, chicken, and shrimp are offered on the menu and served in a variety of unique ways. From being served with a wasabi aioli sauce to shoyu curry, the dishes are pretty much always a guarantee of local goodness. If your in Waimea or anywhere on the west side its a must-stop for lunch or early dinner. As the locals would say, Island Taco is "so ono."
