The suave dining room at the upscale Four Seasons Resort Whistler celebrates "fire and ice" -- fire from the stone fireplace and dramatic backlit onyx panels and ice from the display of fresh fish and shellfish that greets diners. The design may be high-concept but the food is more easygoing and hearty. For appetizers, fresh shucked oysters or seared scallops with cauliflower purée are outstanding, and old-fashioned chicken supreme is made new again with local corn and wild mushrooms. Fresh lobster, prime Canadian steaks, spit-roasted meats, and fresh fish entrees round out the menu. Combine the a la carte selections into three- or four-course dinners for a great value on sublimely prepared food.
