Saison is one of two restaurants in the four-star
Hellerup Park Hotel and is a smart, upmarket place where one of the four-course menus on offer is always vegetarian and low-fat/ sea-food dishes are also in focus. Saison's owner, Erwin Lauterbach was one of the earliest supporters of the now internationally-famous 'Danish gastronomy' movement and believes in the simplicity of good local produce, where meals taste of the vegetables they're made from. Don't dismiss this is a bland, health-food spot, however. With dishes like 'nettles and parsley on toast with mushrooms and chicken', or 'panache of onions with a vegetable béarnaise flavored with tarragon, parsley and chervil', the food here is not only healthy but also imaginative and flamboyant; the restaurant's interior, meanwhile, is smart and cleanly elegant.
